DOMAINE DES TERRES ROUGES
Organic Old-Fashioned Gherkins
Organic Old-Fashioned Gherkins
Burgundy. The same region that gave its name to Dijon mustard also has a long tradition of pickling small gherkins the old-fashioned way, in vinegar with a little salt and spices, nothing else.
Bio means the gherkins are organically grown. À l'ancienne means the pickling follows the old, simple recipe rather than a modern, sweeter version.
Small, crisp, and sour, just as French cornichons should be. We always place a small bowl of them next to the rillette or pâté. They are rarely the main stars, but dinner rarely feels truly French without them.
What makes it unique
Most cornichons in the grocery store are sweet and mass-produced. This variety is sourer and firmer in texture, closer to how cornichons tasted before large-scale production became the norm.
